Sour Cream Mashed Potatoes

A recipe from Dining Service Team Member – Jason

February is Dining Services Appreciation Month. As part of our celebration, we asked team members to share some favorite recipes.
This recipe is from Jason and he recommends a hearty steak in addition to his delicious potatoes.
Sour Cream Mashed Potatoes

Ingredients:

3 pounds boiling potatoes, peeled
2 teaspoons Kosher salt
1 1/2 cups milk
6 tablespoons unsalted butter
1/2 cup sour cream
1/2 teaspoon ground black pepper

Directions:

Cut potatoes in 1 inch cube and place in a pot. Cover and bring to boil until the potatoes fall apart easily when pierced with a fork.
Heat the milk and butter in a saucepan making sure it does not burn
When potatoes are tender, drain in a colander. Use a masher to mash potatoes. As soon as they are mashed, slowly whisk in the hot milk/butter. Add salt, pepper, and sour cream and whisk to smooth.
